Easter Basket Idea

     What are you putting in your kids Easter baskets this year?  This year we are not doing a basket full of candy.  Instead I will be making goodies for our kids baskets to go along with the toys and other things.  Here is a recipe for cinnamon pecan brittle that our kids love.  It can be found of on Elana Amsterdam's website, Elana's Pantry (also found on facebook).  Although this is not a Paleo site, she has some Paleo recipes.  http://www.elanaspantry.com/cinnamon-pecan-brittle/  She also wrote the cookbook, The Gluten-Free Almond flour Cookbook and has another cookbook, Gluten-Free Cupcakes, which is being released soon.  Check her website for other ideas for those Easter baskets.

Cinnamon Pecan Brittle
1 egg white
¼ cup agave nectar
1 teaspoon celtic sea salt
1 teaspoon cinnamon
2 cups pecans

  1. In a large bowl, whisk together egg white, agave, salt and cinnamon
  2. Toss nuts in the egg white mixture to coat
  3. Pour nut mixture onto a parchment paper lined baking sheet
  4. Bake at 300° for 30 minutes, until nuts are browned
  5. Allow nuts to cool for 5 minutes, then break apart and serve
